Nicole Dube – Holistic Nutritionist & Eating Psychology Coach

Nicole Dube, M.A, M.S., CNS, CDN, BCHN is a state-licensed, board-certified clinical and holistic nutritionist and certified eating psychology coach who uses a functional medicine approach to help empower people to make optimal nutrition and lifestyle choices.

Nicole has a Bachelor’s degree from Bowdoin College and a Master’s degree in Health Policy and Administration from the University of Chicago. She has over 22 years of experience as a policy researcher/analyst, working for two state legislatures and the American Medical Association.

Nicole’s love of functional medicine and nutrition began over fifteen years ago, when she became seriously ill and spent over three years shuffling from physician to physician without relief. Finally, she saw a functional medicine physician and was subsequently diagnosed with celiac disease and a metabolic condition, both of which required her to make significant dietary and lifestyle modifications. Through that experience, Nicole learned the critical role nutrition plays in a person’s health. She learned that food can in fact be medicine and dispelled her previously held belief that medical and pharmaceutical interventions are the sole or primary treatment for all health conditions.

Nicole decided to turn her passion into a profession, returning to school to graduate Summa Cum Laude from the University of Bridgeport’s Master’s degree program in Human Nutrition. Furthering her interest in celiac disease, Nicole later trained with Dr. Thomas O’Bryan, one of the country’s leading celiac disease experts. She is a Certified Gluten Practitioner, educating people about gluten sensitivity, celiac disease, and living a gluten-free lifestyle.

Through her educational and clinical experience, Nicole began to realize that what we eat or how often we exercise is only part of achieving optimal health. The other part is who we are as eaters and our relationship with food and the body. She began to study how our social, emotional, and spiritual lives affect how we burn calories and digest and assimilate meals. To further this study, Nicole became a Certified Eating Psychology Coach through the Institute for the Psychology of Eating, completing a rigorous training combining the fields of nutrition and psychology. Nicole is trained to help people identify and heal issues involving weight, body image, disordered eating, and toxic nutritional beliefs.

Nicole received her board-certification in holistic nutrition from the National Association of Nutrition Professionals. She is also licensed by the Connecticut Department of Public Health as a Dietician-Nutritionist.
